Moroccan Krachel Recipe

1 tbsp dry yeast
4 1/2 cups flour
1/2 cup sugar, granulated
1 1/2 tsp salt
2 tsp anise seeds
2 tsp sesame seeds
2 large eggs, lightly beaten
1/2 cup unsalted butter, soft or melted
3/4 cup (more if needed) warm milk
2 tbsp orange flower water

1 tbsp milk
1 tbsp sesame seeds - OR
1 tbsp coarse granulated sugar

  1. Activating the Yeast

    Dissolve the yeast in a few tablespoons of warm (not hot) water and set aside to proof for 5 to 10 minutes while you start to make the dough.
  2. Mixing the Dough

    In a large bowl, combine flour, sugar, salt, sesame seeds, and anise seeds. Add the proofed yeast along with eggs, butter, milk, and orange flower water. Stir until a sticky dough forms. Adjust consistency with milk or flour if needed.
  3. Kneading and Rising

    Knead the dough until smooth, using a stand mixer or by hand. Transfer the dough to an oiled bowl, cover with plastic and then a towel, and let it rise for 1 to 2 hours until doubled in size. Punch down the dough and let it rise again for 45 minutes to an hour.
  4. Shaping and Garnishing

    Oil a large baking sheet or line it with parchment paper. Divide the dough into 12 portions and shape each into a smooth ball. Allow them to rest for 5 to 10 minutes. Flatten each ball into a disc shape, cover, and let rise for an hour or until puffy. Preheat the oven to 450°F (230°C). Make an egg wash, brush each roll, and garnish with sesame seeds and/or coarse sugar.
  5. Baking and Cooling

    Bake the rolls for 15 to 20 minutes or until deep golden brown, rotating the pan(s) halfway through baking for even browning. Cool the krachel on a rack completely before storing or freezing.
