Shakshuka is a Maghrebi meal of poached eggs in a simmering tomato sauce with olive oil, peppers, onion, and garlic, as well as spices such as cumin, paprika, and cayenne pepper.

Shakshuka
2 tablespoons olive oil
1 large chopped onion
1 green bell pepper
2 minced garlic cloves
2 teaspoon paprika
1 teaspoon cumin
¼ teaspoon red pepper flakes or cayenne pepper
6 medium tomatoes
½ cup of tomato sauce
6 large eggs
salt and pepper to taste
fresh cilantro and fresh parsley to garnish

  1. Make the shakshuka tomato sauce

    Heat olive oil in a large sauté pan over medium heat, add the chopped bell pepper and onion, salt, black pepper, paprika, cumin, and pepper flakes and cook for about 5 minutes until the onion becomes translucent, then add the diced tomato and tomato sauce, and bring the sauce to a simmer for about 15 minutes until thickened.
  2. Add the eggs

    Use a spoon to make holes in the sauce and crack the eggs into each one, then cover the pan and cook over medium-low heat for 5-8 minutes until the eggs are done.
  3. Serve

    Once the eggs are ready, garnish with parsley, and cilantro, then serve immediately while it is still hot.
