Ramadan Recipes: Haleem

Haleem is a paste-like stew made of mutton and lentils, which is popular in the Indian subcontinent. The dish is ideal for iftar because it is an abundant source of protein for the fasting person and it makes a fulfilling meal with naan bread.

Mutton Ingredients
750g boneless mutton
8 green chillies
1 tsp ginger-garlic paste
½ tsp turmeric powder
3-4 small cinnamon sticks
4 cloves
2-3 green cardamoms
1 tsp cumin seeds
1 tbsp black pepper powder
salt
1 cup water 200 ml
Lentils Ingredients
½ cup broken wheat
1 tsp split black gram
1 tsp pigeon peas
1 tsp chickpeas
1 tsp yellow split gram lentils
1 tsp rice
salt
3 glasses water
Haleem Ingredients
3 tbsp oil
4 medium-sized onions, diced
1 tsp ginger-garlic paste
½ bunch fresh coriander leaves, chopped
½ bunch fresh mint leaves, chopped
2 slit green chillies
½ tsp full black pepper powder
¼ tsp turmeric powder
1 ½ cup beaten yoghurt
5-6 tbsp clarified butter or ghee
Garnish Ingredients
Fresh coriander leaves, chopped
Fresh mint leaves, chopped
Deep fried onions
5-6 lemons, cut into 4 halves

  1. Cook the Mutton

    Take a large pot and add oil to it. Add mutton pieces to the oil, along with the green chillies and the ginger-garlic paste. Also, add whole spices including cloves, cardamoms, cinnamon, and cumin seeds. Saute until the meat has become brown. Add salt, turmeric powder, and a little water. Blend properly and cook until the mutton has become tender.
  2. Cook Lentils

    In a separate pot, add 3 cups of water, all the lentils. and the rice. Cook until the lentils and rice become tender.
  3. Blend the Meat and Lentils

    In a blender, blend the mutton until a smooth paste is formed. Remove it to a bowl. Add lentils to the blender and blend until a thick smooth paste is formed and pour into a bowl.
  4. Cook and Mutton and Lentils Together

    In a cooking pot, add oil and 4 medium-sized sliced onions and fry until golden brown. Add ginger garlic paste and saute well. Add fresh coriander leaves, mint leaves, and green chillies. Mix these ingredients properly. Add black pepper powder, turmeric powder and mix well. Mix in beaten yoghurt and cook on low flame for 5 minutes. Add the mutton and lentils' pastes and stir in properly. Mix in ghee as well, then cover with a lid and cook for 15 minutes on low flame. Remove the lid and check the consistency of the haleem to see if it is thick and smooth. Remove from heat.
  5. Garnish and Serve

    Add haleem to a large serving bowl and garnish with deep-fried onions, coriander leaves, mint leaves, and lemon slices, then serve hot with naan bread.
