Fereni

1/2 cup rice flour
4 cups milk (whole or low-fat)
1/2 cup sugar
2 tablespoons rosewater
1/4 teaspoon ground cardamom
Crushed pistachios or slivered almonds (for garnish)
Ground cinnamon (optional, for garnish)
  • Method & Directions

    • 35 Minutes
  1. Mix Rice Flour and MilK
In a mixing bowl, whisk together the rice flour and 1 cup of milk until smooth and well combined, ensuring there are no lumps.
  2. Prepare the Fereni Base
In a saucepan, heat the remaining 3 cups of milk over medium heat until it begins to simmer. Once the milk is simmering, gradually pour in the rice flour mixture while stirring continuously to prevent clumping.
  3. Add Sweeteners and Flavorings
Stir in the sugar, rosewater, and ground cardamom until the sugar is completely dissolved and the mixture thickens slightly. This should take about 10-15 minutes of simmering.
  4. Simmer Until Thickened
Reduce the heat to low and let the Fereni simmer gently, stirring frequently, until it thickens to a creamy consistency similar to pudding. This should take another 10-15 minutes.
  5. Serve and Garnish
Once the Fereni reaches the desired thickness, remove it from the heat and let it cool slightly. Pour the Fereni into serving bowls or a large serving dish. Garnish with crushed pistachios or slivered almonds, and a sprinkle of ground cinnamon if desired.
  6. Chill and Enjoy
Allow the Fereni to cool to room temperature, then refrigerate for at least 1-2 hours before serving. This dessert can be enjoyed warm or chilled, according to preference.
  7. Incorporate dry ingredients
Gradually add the sifted dry ingredients to the batter, folding gently until fully combined. Be careful not to overmix, as this can result in a dense cake texture.
  8. Bake the layers
Pour a thin layer of batter into the prepared baking pan and spread it evenly using a spatula. Place the pan in the preheated oven and bake for 5-7 minutes, or until the layer is set and lightly golden. Repeat this process, alternating between layers of batter and baking, until all the batter is used.
  9. Cool the cake
Once all the layers are baked, remove the pan from the oven and allow the cake to cool in the pan for 10-15 minutes. This allows the cake to set slightly before transferring it to a wire rack to cool completely.
  10. Slice and serve
Once cooled, slice the Indonesian Layered Cake into squares or rectangles using a sharp knife. Serve and enjoy this delightful treat with your loved ones!
