Musakhan

1 whole chicken, cut into pieces
2 large onions, thinly sliced
4 tablespoons olive oil
2 tablespoons ground sumac
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
Salt and pepper to taste
4-6 pieces of Arabic flatbread (such as taboon or pita)
1/4 cup pine nuts, toasted
Fresh parsley or cilantro for garnish

  1. Marinate the Chicken

    In a bowl, combine the chicken pieces with olive oil, ground sumac, ground cumin, ground coriander, paprika, salt, and pepper. Massage the marinade into the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  2. Caramelize the Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until golden brown and caramelized, about 20-25 minutes. Remove from heat and set aside.
  3. Preheat the Oven

    Preheat your oven to 200°C (400°F).
  4. Assemble the Musakhan

    Place the pieces of Arabic flatbread on a baking sheet. Spread a layer of caramelized onions over each piece of bread, then arrange the marinated chicken pieces on top of the onions.
  5. Roast the Musakhan

    Transfer the baking sheet to the preheated oven and roast the Musakhan for 25-30 minutes, or until the chicken is cooked through and the flatbread is crispy around the edges.
  6. Serve
